This is one of those recipes thats great for a busy weeknight.

Make the pesto 5 minutes tops this is a matter of putting 5 ingredients in a food processor and blitzing until finely chopped then slowly pouring in the oil while it processes until all combined. Take the pan of the heat then stir in the creme fraiche.
Its ready in under 20 minutes. Drain pasta well and return to pot along with chicken and sauce. Cover and cook 8 to 10 minutes stirring frequently until al dente and liquid is almost absorbed. Return pasta to pan then add pesto and reserved water and toss to combine.
Add chicken spinach and parmesan season and gently toss to combine. Halve or quarter the tomatoes add to the chicken and give the pan a shake. In a large bowl combine pasta chicken sun dried tomatoes and pesto. Return the pasta beans and spinach to the pan pour in the pesto from the processor and stir together loosening with splashes of cooking water until silky. Cook 2 3 minutes longer or until heated through. Simmer for another 1 2 minutes until the chicken is properly cooked through.
Add the pasta to the skillet with the chicken and stir to combine. Reduce heat to medium. Return the pan to the heat and stir in the pesto. Stir the spinach into the pasta pan then drain reserving a cupful of the starchy cooking water.
Season to taste with a little more salt and pepper. Divide pasta mixture among bowls scatter over extra. Once the chicken is cooked reduce the heat to mediumlow and add in the pesto cream and parmesan cheese. Meanwhile in a large skillet saute mushrooms and red pepper in oil until tender.
